Relationship of anatomy, physiology, and biochemistry to transformation of feed energy to free energy; energy utilization at levels of the cells, the organism, and the organism in relation to its environment. DY 610-ADVANCED DAIRY TECHNOLOGY. 5 credits Theories associated with chemical and physical changes of milk constituents during processing and storage of dairy products. Special tests and quality measure- ments essential in identifying and measuring degrees of these changes. DY 611-ADVANCED DAIRY PRODUCTS PROCESSING. 5 credits Advanced methods of processing, and approaches to new product development through rearranged operations and adaptations of specialized types of equipment and their functions. DY 612-ADVANCED DAIRY MICROBIOLOGY. 5 credits Methods of microbiological control of dairy products, with emphasis on phys- iological chemistry of dairy microorganisms and metabolic pathways in dairy prod- uct fermentations.
