Coefficient of purity......... .88.o2 per cent Equal to 13 per cent. or 260 lbs. pure sugar per ton of cane. A recent analysis by Prof. H. W. Wiley, chief chemist U. S. Dept. of Agrl., shows: Sucrose .................. 12.20 per cent. Glucose .................. .50 per cent. Coefficient of purity ........ .8.90 per cent. Equal to 9.17 per cent. or 183 lbs. pure sugar per ton of cane. The estimate of thirty tons of cane per acre, with a yield of I60 lbs. of granulated sugar per ton, is therefore well within the limits for practical work. STATISTICS OF SUGAR.
